For those doing the gluten-free gig, then this pasta dish is a great one for you. The tahini and pumpkin seeds in the sauce make it have a delicious creamy texture that I love. *If Zucchini noodles aren’t your thing, this sauce is also great on other pastas!
2-3 dates pitted
1/3 cup of pumpkin seeds
1/2 cup of tahini
2 garlic gloves
1/4 cup of almond milk
1/3 cup of basil chopped
Use a spiralizer to turn the zucchinis into noodles.
Add the rest of the ingredients into a food processor and blitz for a few minutes until mostly smooth.
Mix into the noodles. You may have to use your hands and get a little messy.
Serve with some pumpkin seeds on top.
