If you haven’t figured out I am a big salad fan. I find them the quickest, easiest and yummiest way to keep me healthy and happy! This salad is play on Middle Eastern flavours and is a great way to consume the added nutrients that you get from all the wonderful green herbs.
3 cups of shredded red cabbage
1-2 carrots peeled in shreds
1/3 red onion chopped
1 bunch of coriander chopped
1 bunch of mint chopped
½ bunch of parsley chopped
2 handfuls of hazelnuts chopped ( If you feel up for it these are great roasted!)
1/4 cup olive oil
5 tablespoons of apple cider vinegar
1 tablespoon of maple syrup
Juice of 1 lemon
1/2 tea spoon of sea salt
A good amount of cracked black pepper
1 tablespoon of sumac
Combine the salad ingredients in a big bowl.
Mix the salad ingredients and dress when you are ready to serve. EASY!
