Raw Strawberry Slice

Posted in Food on December 28, 2017

Frozen fruity deserts are the best on hot summer days and nights. These are perfect to serve at a dinner party or as an alternative for your kids as a icy treat rather than something pumped with artificial colours and flavours. Proof that sweet doesn’t have to be crazy-making for the little ones!

1 1/2 cups almonds

1/4 cup cacao powder

2 tablespoons maple syrup

1 tablespoon coconut oil

Dash of water if needed

3 punnets stawberries

2 cups shredded coconut, soak in water for 10 minutes before starting

1/2 cup coconut cream

2 tablespoons maple syrup

2 tablespoons coconut oil

1/2 cup of dried strawberries

Optional – coconut flakes

Place the soaked coconut with the rest of the ingredients for the base into a food processor and blitz until relatively smooth. In a tray lined with baking paper, pour the mix and flatten out. Place in freezer to harden

Place the rest of the ingredients in the food processor and mix until smooth. Pour them on top of the base in the tray. Top with some dried strawberries. Freeze for at least 4 hours. Slice when serving and sprinkle some coconut flakes and a few loose dried strawberries if there are any left!
