I am in love with this salad for its ease and crispness. Try it out and Im sure it will be a winner for your family and friends too.
1 bunch of rainbow carrots, thinly sliced
1 packet tempeh
1 Lebanese cucumber, cut into thin sticks
1/2 bunch of mint roughly chopped
1 bunch of coriander, roughly chopped
4 stalks of spring onions, thin long slices
1/4 bunch of savoy cabbage, sliced and chopped
1 tablespoon tamari
1 teaspoon coconut nectar
1 tablespoon sesame oil
Sliced red chilli as an option.
Soak tempeh sliced in tamari for 2 minutes. Heat sesame oil in a fry pan and then add sliced tempeh and fry for approx. 5 minutes, turning them so they do not burn.
Add the rest of the vegetables to a bowl. Mix the dressing. Add tempeh to bowl and then toss dressing through salad
