Watermelon Gazpacho

This next batch of recipes that Tracy has created for a Mexican feast is out-of-this-world good! I may be a sucker for anything Mexican but I think it is agreed, the food is amazing! Many people wouldn’t think it is possible to do without the cheese but let me assure you it is! This watermelon gazpacho combines sweetness with the perfect amount of spice and is such a wonderful starter for a feast, that will be guaranteed to wow your guests!


3 cups watermelon cubes
1/4 cup coconut water
1/8 cup fresh lime juice
1/4 – 1 teaspoon jalapeño, diced (depending on how spicy up like it)
1/4 teaspoon chipotle powder or chilli powder
1/2 cup cucumber, seeded and diced, plus and extra 1/2 cup for garnish
1/2 cup nashi pear, diced
Fresh coriander, for garnish


Blend all ingredients expect for the extra cucumber, nacho pear and coriander. Taste for spice and sweetness. If its too sweet, add more cucumber. If its not spicy enough add more jalapeño. If you prefer a more smoky flavour, add more chipotle powder. Keep cool until ready to eat. Pour into small bowls and garnish with diced cucumber, pears and coriander. Can be made a few hours ahead of time.
